GINGER GINGER!!!

I love ginger but preparing it for use sometimes is a pain. I buy organic ginger at Costco, 2 containers at a time. Winter I used it a lot in my hot tea in the mornings. Summer not so much! Who wants hot tea when it’s 80+ degrees outside? NOT ME!

So my ginger was sitting in my fridge waisting away and I needed to come up with a way to use it. I actually decided to use it all and freeze them in silicone squares….

THE JUICE:

Chop all the ginger in to smaller pieces and wash.
Juice like crazy! DO NOT COMPOST THE PULP!
I make coconut herb cubes with these but thought they would be great for the ginger juice.
Each cube is the perfect amount of ginger juice.
Pour ginger juice slowly in each cube, making sure to leave some room at the top for expansion.

set in your freezer. Make sure to keep the container as level as possible.
Nice and frozen!
Perfect ginger cubes to throw in hot or cold water, and even smoothies. I am so excited to use more ginger now!
I add a large frozen cube to 1/2 gallon of filter water and let it melt. So I can have a raw cold drink with all the enzymes or heat it up to have a nice warm cup of ginger tea.
You can watch it melt right before your eyes!

THE PULP:

Spread the pulp on to a dehydrator sheet.
Place another liner on top so the pieces won’t blow around as they dry out.

Place dehydrated ginger pulp into the dry container for the Vitamix and grind into powder.
Do not do what I did, don’t smell the goods. I choked on the powder! It is very potent!
Boom! RAW ORGANIC GINGER POWDER!

I can’t believe this all worked out as good as it did. I used every bit of the ginger and wasted nothing!
